Lazy Meatloaf

Amazingly yummy super easy crockpot meatloaf

2 med to large onions sliced thinly
Half of a head of celery sliced thinly
1 pound of chopped fresh mushrooms
Seasoning to taste (Lawry’s)
3 pounds of ground meat (I used pork but beef or turkey will work)
4 eggs
1 cup instant oats

Take the onions and celery in a lightly oiled baking dish and bake at 350° for 20 minutes with seasoning on top (or fry it)
Add the chopped onions on top of the vegetables and bake another 20-25 minutes until very wilted
In a large bowl mix 4 eggs into the meat and oatmeal
Drain the juice off of the veggies and mix them into the meat mixture
Spread the mixture on the bottom of a 6 Qt crockpot (or 2 smaller ones) and put on high for 2 to 3 hours (all crockpots heat differently so check after 2 hours)
Drain off the juice/fat (veggies add a ton of moisture)
Top with sauce (I use a mix of homemade BBQ sauce and ketchup) cook for 20 more mins on high or an hour on low
Serve at your convenience

You could easily bake this but the crocks don’t heat up the house so badly and this can cook while you nap or do other stuff
