I get that you don’t do sugar, I know that you don’t handle gluten, I understand that most anything sugar free offends you but why the fuck must you hate vegetables and anything with fiber also?
And you, brain, you know this but you have had me craving cauliflower au gratin for days, why when you know it will hurt me do you drive me crazy, sugar addiction I can fight by realizing how bad it is for me…but Vegetables?
BTW the cauliflower au gratin was Amazing
1 pound of cauliflower florets (I used a frozen bag full I allowed to mostly thaw)
1 tablespoon of butter
1 cup of shredded cheese (any type, I used Monterey jack and White cheddar)
1/4 of a large thinly sliced sweet onion
2/3 + 1/3 cup milk
Season to taste (I used garlic salt and Morton’s seasoning salt)
1 tablespoon gluten free baking mix
Optional… shredded chicken or diced bacon
In a microwave safe dish mix the butter, seasonings, onions, cauliflower and meat and microwave for 5 mins stirring halfway through.
Pour everything into a baking dish with 2/3 cup milk and stir in the cheese saving back a small amount for the top
Bake at 350° for 25 mins then mix the remaining cold milk and GF baking mix together and stir into the hot vegetables, sprinkle the remaining cheese on top and bake for another 10 mins
Serve as a side dish or by itself.
