Super Easy Never Fail Fudge and equally Real Easy Real Pumpkin Cake

This year I am only making a few food gifts for the holidays some fancy brownies, my super easy never fail fudge and some Spicy Pumpkin cake with real Pumpkin.

Here are the recipes for the last two:

Super Easy Never Fail Fudge

Ingredients:

1 bag of baking chips (any kind though I like semi sweet)

1 carton of pre-made frosting

Directions:

Place the baking chips in a microwave safe bowl and slowly melt, I do this 20 seconds at a time and stir as I go until they are melted but not bubbling, then add in the frosting.  Add any mix ins you want like walnuts or caramel bits at this point.

Stir until it is well mixed and spoon out onto a oiled dish or wax paper.  If you like thicker dryer fudge use less frosting, by the same token you can use more for a richer creamier fudge.

You can make this in many different ways here are some examples…use your imagination.

Chocolate Peanut butter Fudge (Peanut butter baking chips and Fudge or dark chocolate frosting)

Mint Chocolate Fudge (mint chips and chocolate frosting)

Butterscotch fudge (Butterscotch chips and white chocolate frosting)

 

the there is The Real Easy Real Pumpkin Cake

Ingredients:

15 oz of Pumpkin Puree (not pumpkin pie filling)

1 basic cake mix (for gifts I buy the really good Carrot cake mix but I have made this with Spice cake as well)

2 eggs

a cup of raisins

3 oz of crushed walnuts (you can use shelled pumpkin seeds as well)

2 packets of dry spiced Apple cider drink mix

Pie Spice to taste

Directions:

Mix eggs and puree together then add the cake mix and the drink mix to the bowl and blend well for 2 mins with beaters, this ends up with a great, fluffy mousse like texture at this point. Fold in the raisins and nuts/seeds.

Oil the pan and pour the mix in then place in a pre-heated  350*f oven for 22 mins, at this point check the cake with a toothpick or bamboo skewer to check to see if it comes out clean.  If the skewer comes back dirty add a few more minutes and check again.  I also make cupcakes out of this and start checking them at 12 mins.

You can make a cream cheese frosting or a simple glaze with powdered sugar to top it with if you want but it doesn’t need it.
