Super Cheesy Artichoke dip – Recipe


1 can marinated artichoke hearts, drained and chopped
1 1/2 cup olive oil light mayonnaise
2 cups shredded  Parmesan cheese
1 cup shredded Mozzarella cheese
2 (8 ounce) packages cream cheese, softened
2 medium onions diced
1 tbs finely diced Garlic


1 cup finally diced spinach

1/4 cup diced green peppers (medium to hot)


lightly oil an 8×8 or 9×9 baking pan (I prefer glass), preheat the oven to 350*f

in a large bowl stir all the ingredients except for 1 cup of Parmesan cheese together and pour into the baking dish then top with the remaining Parmesan cheese and bake for 25 mins or until the mix is nice and bubbly.

This can be served hot cold or room temp and reheats well in the microwave.

Serve with crackers, bits of Pita Bread or vegetables
